Seasonal Recipes with Mylk MA’AM: A Celebration of Fresh Flavors

Hey mamas! Spring is officially coming, and we're all about embracing the healthy good vibes and celebrating the season with delicious, plant-based treats.

Spring for me is about outdoor adventures, and lighter, fresher flavors. It's the perfect time to ditch the heavy winter meals and embrace the abundance of seasonal produce. And let's be honest, who doesn't love a good snack?

This spring, we're not just focusing on mylk (though we still adore it!), we're exploring the entire range of Mylk Ma'am goodies, from our healthy granolas to our fresh vegan mousse, and even our versatile plant-based cheese and butter; We're thinking outside the box and creating some exciting new recipes and pairings that are perfect for spring.

One of my favorite things to do in spring is to enjoy a healthy, pure and gut healing snack. And this year, my basket is overflowing with Mylk Ma'am goodness! Think mini granola parfaits with coconut yogurt and fresh berries, plant-based cheese and veggie toast on whole-wheat loaf bread, and little pots of our vegan mousse for a sweet treat, I’ve even been experimenting with using our oat and coconut crumbs to create crispy coatings for spring veggies – talk about a flavor explosion!

Speaking of our plant-based cheese and butter, they're not just for sandwiches and toast. They’re incredibly versatile ingredients that can be used in so many different ways. I’ve been whipping up some amazing spring-inspired recipes, like a creamy vegan pasta with our plant-based cheese sauce, and mini quiches with our flaky vegan butter crust. These recipes are perfect for a light lunch or dinner.

Recipe Spotlight: Mini Vegan Quiches with Spring Veggies

These mini quiches are the perfect addition to your spring picnic or brunch. They're easy to make, packed with flavor, and use our delicious vegan butter to create a perfectly flaky crust.

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • ½ cup Mylk Ma'am Vegan Butter, chilled and cubed
  • 3-4 tablespoons ice water

For the Filling:

  • 1 tablespoon olive oil
  • 1 cup chopped spring vegetables (e.g., asparagus, bell peppers, zucchini, spinach)
  • ½ cup Mylk Ma'am Plant-Based Cheese, shredded
  • ½ cup plant-based milk (we recommend our oat or cashew mylk)
  • 2 tablespoons cornstarch
  • Salt and pepper to taste

Preparing the Crust:

  • In a bowl, combine the flour and vegan butter.
  • Use your fingers or a pastry blender to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together.
  • Form the dough into a disc, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Filling: While the dough is chilling, heat the olive oil in a skillet over medium heat. Add the chopped vegetables and cook until they are tender-crisp, about 5-7 minutes.
  • Season with salt and pepper.
  • Make the Custard: In a separate bowl, whisk together the plant-based milk, cornstarch, salt, and pepper.
  • Assemble the Quiches: Roll out the chilled dough on a lightly floured surface and cut out circles using a cookie cutter or glass.
  • Press each circle into a mini muffin tin.
  • Fill the Quiches: Divide the cooked vegetables evenly among the muffin cups. Sprinkle with shredded plant-based cheese.
  • Pour the custard mixture over the vegetables and cheese.
  • Bake for 20-25 minutes, or until the crust is golden brown and the filling is set.
  • Let the quiches cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

And let's not forget about our Granolas! They're not just for breakfast anymore. We've been using them as a topping for salads, (I recommend our Savory Granola) you can also use our other Granolas and add them to smoothies for an extra crunch, and even using them as a coating for baked fruit. The possibilities are endless!
